Savory Sunday Dinner Ideas




 Shrimp Scampi with Spinach and Tomatoes


This dish is delicious, light and healthy. Large Wild Caught shrimp makes this dish amazing!! 


Ingredients 

1lb Large Shrimp ( Fresh or Frozen)

11/2 tsp. of Salt and Pepper

1tsp. of Old Bay Seasoning 

1 tsp. of Lemon Pepper Seasoning 

3 TBSP of Olive Oil 

2 1/2 tsps. of minced garlic 

1 Lemon Juiced and zest 

1/3 cup of unsalted butter 

1 Pound of Angel Hair Pasta ( Follow the Box Cooking Instructions )

1 cup of Fresh Spinach 

1/2 Cup of diced tomatoes 

1tsp of Fresh Basil 


Directions:

1. Wash and peeled large shrimp and set aside in a large bowl

2. Season shrimp with salt, pepper, old bay and lemon pepper seasonings.

3. Heat large skillet with olive oil on medium-high heat. Sauté until shrimp is slightly cooked, Cook for 3 minutes and stir constantly. Remove and placed on a plate

4. Make the Sauce: In the large skillet on low heat add minced garlic and lemon juice. Simmer for 5 minutes. 

5. Next: Add shrimp to sampi sauce and toss for 5 minutes. Add Cooked pasta, spinach and tomatoes. Toss and simmer for 10 minutes. Add fresh basil and serve. Enjoy!
