 Sautéed Collard Greens with Rosemary and Garlic

Recipe:  Vegan/Side Dish 


  • 2 ( 32oz) Bunches of Collard Greens ( Washed, Trimmed and Chopped) 

  • 1 Tablespoon of minced garlic 

  • 2 Tablespoons of diced shallots or yellow onions

  • 4 Tablespoons of Olive 

  • ½ tsp of salt 

  • ½ tsp of pepper

  • ¼ tsp of red pepper flakes 

  • ¼ tsp of fresh or dried rosemary herb

  • 1 tsp of apple cider vinegar



  1. Warm the olive oil in a wide skillet. Add the garlic, shallot and cook, stirring frequently, until fragrant, about 90 seconds. Add the spices (salt, pepper, paprika and rosemary ), stir, and cook for 30 seconds more until toasted.

  2. Stir in the collard greens, stirring well to coat with the spices, and continue to cook, stirring frequently, until softened and reduced in size by about half. Add the vinegar or other liquid, stir in well, and quickly cover the pan with a lid. Reduce the heat to medium-low and let steam, covered, for about 5 minutes.

  3. Remove the lid and stir well. If needed, continue cooking until desired softness is reached. Serve warm.
